I have quite a few variables and functions and they look a bit messy in the blueprints. Are there subfolders so a group of related variables can be put into specific subfolders?

If you select a variable, you’ll see an option that says Categories. By default, it says Default in there, You can just type a name in there and it will create a folder basically with that name. You can then drag other variables into that folder or create more folders, whatever you need.
You can also create subfolders with pipe | vertical bar:
