Right now if I download an asset from bridge into UE5, it automatically channel packs textures and there is no way to turn this off. This is a problem with 3D grass because the opacity map is in a channel packed texture and thus has mipmaps enabled. This leads to a problem because as the opacity mips, the grass disappears as the player gets farther away. There is no way to disable this behavior except to disable mips on the entire channel packed texture, which obviously is not a good procedure to do.

You can’t do this in export option inside Bridge Plugin?

Not in the built in plugin. There are no export options
I’m assuming you’re asking for this for convenience… I’m also assuming you know you can download Bridge separately and download anything you need from there.
