[advice needed] for skin

I see a lot of tutorials saying to map out red and blue areas on the body

this tutorial says…

red is used on places where the blood is close to surface, and the blue/green color is used for fatty areas

As someone that is new to all this, what is the best/easiest way to tell where the blood and fatty areas are on a model?

I saw 1 video/tutorial with them putting a light inside the model to view the red areas, but I’m not sure if that’s the way you go about it

is it the sub-surface scatting that I need to look into? I asked on the Allegorithmic forum and was told to get my textures looking better, I need a thickness and ambient occlusion maps baked. I know a little bit, and I’ve never heard of a thickness map before, and I’m assuming it’s the SSS map
