When inputting both left and right at the same time it will always prioritise the negated value, is there anyway to have them equal out instead?

Yes, there is a way to do it.
Open your Input Action and set the Accumulation Behaviour (under the Advanced dropdown) to Cumulative.
By default, Enhanced Input does not sum opposing inputs; instead, it resolves the value based on priority or the last input received. That’s why when you press left and right at the same time, one of the values (usually the negative one) ends up taking priority. The same thing also happens if you press up and down.
When using Cumulative, the input becomes the sum of whatever is being pressed, instead of being overridden. So if you press left (-1) and right (+1) at the same time, they cancel each other out and the final result is 0.
With this, it should work correctly as you mentioned.
