Following these steps worked for me with UE 5.1.1 in March 2023.
The first time I paused the download and moved the existing files to the directory, I deleted the folder the store created with the .egstore and Pending folders. When I tried resuming the download, Epic crashed.
The next time, I made sure the .egstore and pending folders were in the same directory and was able to resume the installation without any issues. Epic just took a few minutes to verify and I was good to go.
