Between those 3 specs pick one that has most VRAM. Last one with 8gb vram is bad.
Middle one looks best, most VRAM most RAM and good enough CPU 
However you want two m.2 SSDs one for system and one for your unreal projects, and one magnetic HDD for storing stuff locally like assets, textures, sounds etc.
