Unfortunately this information is totally out-dated. There are no Project Settings in the menu Edit, and the Project Settings under the ‘Project’ drop-down do not contain any of the settings mentioned in this article.
I found a comment a few days ago that told how to do this in April '23 - if I can find it again I’ll post a link here.

EDIT: found it!

In the Content Browser search for GameFeatureData, double click on that item and in Experience Data there’s a setting for Default Map.

It’s not outdated, though. In v5.3.2, it’s under Settings -> Project Settings... -> Project -> Maps & Modes. “Settings” being the drop-down on the right-hand side of the main toolbar (the only thing that changed from the original post).
