Hi Pouyad,
The recommended Nvidia driver version for UE 5.6 is 560.81. You can try to install this version which should be more stable as it is the ones we used to stabilize the 5.6.0 release.
The driver recommend driver version changes with every release and you can find the information in Engine\Config\BaseHardware.ini.
