Why are my material nodes so limited?

I’m sure I’m missing something very basic, but when people create “New Materials” their starting Node is this:

And mine is this:

Is there something I am missing? I have watched numerous videos and I can’t seem to find out why I cant modify my material as easily as others.

Look at the toolbar across the top of the window and look for ‘Connectors’. Hit that and everything will expand to be like the first image you posted.
