TwinStickShooter "Realistic Rotation"

I’m currently working on a TwinStickShooter, but I wanted, that rotating feels real. When I flip the analog stick (Controller) from the top (X:0 Y:1) to the bottom (X:0 Y:-1) the ship should fly a curve. I put this code together, but my probleme is, that the front of the ship shakes like hell.

I’m pretty shure the probleme is, that the ship rotates to far and in the next frame to far back. Again and again.

Does anybody have an idea how to fix it?
