Overview of the asset creation process? Anyone?

I am not developing anything yet, which should come as no surprise as evidenced
by the following question.

What Id like to find, and I have searched forever looking, is just an overview
of the whole process. Nothing specific, I just think it would help to see a big picture
of the asset creation process.

There are so many different programs, and I cant really figure out what does what because
I dont know what the whole process entails, from start to finish. Where texturing
comes into play,etc.

I have watched a lot of youtube videos, but they dont really tell you WHY they have switched
from maya to zbrush, or this to that.

If anyone could point me in the right direction that would be awesome.

what Ive seen so far.

for textures their is gimp which does .png files which are supported as textures, for models their is maya expensive but easy to use and highly professional. gimp is free, while you can use photoshop if you have a lot of money, otherwise your best bet is gimp, which is free and professional but experts with photoshop will find this rather easy, newcomers will not. for models there is maya, and zbrush both highly expensive otherwise go with editing the imported models and their meshes and experiment on some you bought from the market place.
