Is it better to have models that have double faces or is it better to have a two-sided material instead?

When you use two-sided materials, back-face culling for the triangles are disabled so that the triangles can be rendered from both sides. This is less performant because, since the back-facing triangles aren’t being culled, more triangles are being rendered.

To fix this: in blender, simply flip the normals of all the red triangles; you can do this manually or by using “recalculate outside”.
