A work-around that worked for me, having the same problem, is to delete the Fortnite folder in your Epic Games folder. Then (or the other way around) go in the launcher into the settings (cog wheel top right), search for “Manage Apps”. There open up “FORTNITE” and disable “Auto-Update Fortnite”. It stopped the automatic updates for me.
Definetly an “oversight” tho.
