My first suggestion would be to have a well defined, design document with all your goals, what the game will play like, what features will be covered in the prototype, basically define your vertical slice.
Once you have that as your base, I would not go to FAB right away, it’s better to have full control of your foundation, and setup basic mechanics the way you want. Since it’s your first time, I recommend following an extended tutorial. There’s an ongoing video series on creating an arcade racer, that I think will be quite useful for your objective.
