You can definitely submit your project, there's not a limitation to prevent you from submitting just because it's just you developing, I'm sure several people that have gotten grants are single developers.

Hello, I'm wondering in epic mega grant if can support me if I just only one developer !!!!! and I think my game is promising I've working on it over 2 years now, Is there any chance to get support from epic??

and this my game "Shifting" demo version inspired from transformers movie.
